Fresh veggies like asparagus and carrots are a perfect accompaniment to grilled favorites and can be placed on the grates right next to the protein you’re serving to make hosting a cinch and avoid heating up the kitchen.

Grilled Asparagus

Prep time: 5 minutes
Cook time: 15 minutes

  • 1 bundle fresh asparagus
  • 1 package (3-4 ounces) prosciutto
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon pepper
  • 3 tablespoons butter
  1. Preheat grill to medium heat.
  2. Wash and cut asparagus spears to equal sizes.
  3. Wrap four asparagus spears with prosciutto. Repeat until all asparagus and prosciutto are used, about six bundles. Place in cast-iron skillet or disposable aluminum pan. Cover bundles with garlic powder, onion powder, pepper and butter.
  4. Place skillet or pan on grill. Grill 15 minutes, turning bundles halfway through cooking.

Carrots

Let’s talk savvy grilled carrots for a minute. I know it’s not the first thing you think of when you’re planning a meal but maybe it should be. Carrots are an overlooked vegetable by most kids and adults alike unless they are on a veggie tray covered in ranch dressing. Let’s jazz them up a bit and make them the hit of the party.

With this easy recipe, you’ll discover it doesn’t take a lot of ingredients or time to make a plain can of carrots into the tastiest dish on the menu. These carrots will have your family going back for seconds, so double the recipe if you need to so your entire family is happy – and full. Now that’s what I call a savvy, eye-opening vegetable!

Grilled Sweet Carrots

Cook time: 25 minutes

  • 1          can (14 1/2 ounces) sliced carrots
  • 3          heaping tablespoons brown sugar
  • salt, to taste
  • pepper, to taste
  • 2          tablespoons butter
  1. Heat grill to medium heat.
  2. Pour carrots and juice into small, disposable aluminum pan. Mix in brown sugar and season with salt and pepper, to taste. Top with butter.
  3. Grill carrots in pan 25 minutes.
  4. Serve in bowls with juices poured over top.
